Apostle’s Bread Ring

Anyone can make this bread! There’s no need to knead by hand — simply mix everything together in a mixer.

Apostle's Ring Bread is a traditional Maltese bread, specifically prepared during the Lenten period. It is a deliciously soft bread with a crunchy crust, topped with sesame seeds and 12 almonds representing the Apostles.

Ingredients - Serves 1 Large Bread
  • 360g/12.7oz Bread Plain Flour 0
  • 1½ Tsp Salt
  • 60ml Milk (room temperature)
  • 180ml Warm Water
  • 15g/0.52oz Instant Yeast
  • 2 Tsp Sugar
  • 2 Tbsp Olive Oil
  • 12 Whole Almonds
  • Sesame Seeds
Method
  1. In a mixer’s bowl, add the flour, yeast and sugar and mix together then add the salt and stir again.
  2. Add in milk, warm water, and olive oil. Mix with the dough hook for 5 minutes until smooth.
  3. Cover the bowl with clingfilm and a cloth and leave to rise for 1 hour in a warm place.
  4. Line a large round baking tray with baking paper.
  5. Roll the dough into a log shape of about 80cm and join the ends into a ring. Place on baking tray.
  6. Brush the dough with extra milk, slightly press the almonds into the dough and sprinkle sesame seeds on top. Leave to rise again for 30 minutes.
  7. Bake in preheated oven 200C/400F until it has a nice golden-brown colour.
