Ingredients
  • 3 Eggs, room temperature
  • 125 Sugar 125g/4.4oz
  • 3 Pink Lady Apples, peeled and sliced
  • 180 Plain 180g/6.3oz Flour
  • 80 Butter, 80g/2.8oz melted
  • 50 Dark 50g/1.8oz Chocolate Chips plus extra to decorate on top
  • 1 1/2 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • 1 Tsp Cinnamon
  • Zest of a Small Lemon
Method
  1. Preheat oven to 180C/350F.
  2. Butter grease and dust with flour a 23cm springform cake pan.
  3. In a bowl sift together, the flour, baking powder and soda.
  4. Beat and whisk the eggs, sugar, lemon zest and cinnamon till frotty, about 7-8 minutes. Add the melted butter, mix well, then add and sifted flour, baking powder, baking soda and sugar. Whisk until well combined.
  5. Fold in two sliced apples and chocolate chips.
  6. Pour the batter into your prepared cake pan. Top with remaining sliced apples and a few extra chocolate chips.
  7. Bake in oven for 45 minutes or until a toothpick inserted in the center comes out clean.
  8. Leave to cool then dust with icing sugar and top with a few more chocolate chips.
