Apple & Walnut Cake

Ingredients - Serves 10 Slices
  • 2 Apples, peeled and shredded
  • 2 2 Eggs, room temperature
  • 75g/2.6oz Walnuts, chopped
  • 100g/3.5oz Brown Sugar
  • 110g/3.8oz Melted Butter
  • 150g/5.3oz Plain Flour
  • 1 Tsp Baking Powder
  • ½ Tsp Baking Soda
  • 1 Tsp Cinnamon Powder
  • ¼ Tsp Ground Nutmeg
  • ½ Tsp Orange Zest
  • 1 Tsp Vanilla Essence
  • Brown Sugar to Sprinkle
  • ½ Cup Nick Caramel Toffee Sauce
Method
  1. Preheat oven to 175C/340F.
  2. Line a 21x11cm loaf pan with parchment paper.
  3. In a large bowl, add the eggs and brown sugar. Whisk for 2-3 minutes. Add the melted butter and whisk again for 1 minute.
  4. Sift the flour into the egg mixture, add the baking powder, baking soda, nutmeg, cinnamon and orange zest. Fold in gently until well incorporated.
  5. Add the grated apples, chopped walnuts and vanilla essence. Fold in gently again until combined.
  6. Pour batter into prepared loaf pan and sprinkle a little brown sugar on top. Bake for 30-35 minutes, until a toothpick inserted in the middle comes out clean.
  7. Remove from oven. Leave to rest for 5 minutes and poke wholes into the cake.
  8. Slightly warm the caramel sauce in the microwave and pour over the cake. Let it soak well!
  9. Leave the cake to cool and remove from pan.
  10. Enjoy as it is or take it a little further with some custard on top!
