Description

Yummy for Breakfast Lunch or any time of day!

Ingredients
  • 3 Large Potatoes (Peeled & Cubed)
  • 2 Tbsp Olive Oil
  • 250g/9oz Bacon (Streaky)
  • 1 Onion (Finely Chopped)
  • 2 Cloves Garlic (Crushed)
  • 200/8oz Cheddar (Grated)
  • 6 Eggs
  • ½ Cup Milk
  • ¾ Cup Elmlea Double Cream (Heavy Cream)
  • ½ Tsp Schwartz Season-All (Herb and Spice Blend)
  • Salt & Pepper
Method
  1. Preheat oven 180C/350F.

  2. Toss the potatoes in olive oil and season with salt/pepper.

  3. Transfer to a baking sheet and bake until crisp and golden (about 30 minutes) then remove from oven.

  4. While the potatoes are baking, fry the onion and bacon until bacon is crisp.

  5. Add the garlic and saute for just 1 minute. 

  6. Remove from heat.

  7. Place the potatoes, bacon and onion mixture and half of the grated cheese in a 9x13 inch casserole dish.

  8. Whisk the eggs, milk, cream and seasoning together and pour over the potatoes and bacon.

  9. Top with remaining cheese and place in oven.

  10. Bake for 30-45 minutes until golden brown and cooked through.

  11. Remove from oven, allow to rest for 5 minutes and serve.
