Chicken is coated with flour and baking powder and simply baked in the oven for a perfect crispy skin, then tender and juicy on the inside.

Wash and pat dry drumsticks.
In a bowl, combine the flour, pepper and baking powder.
Toss the drumsticks to evenly coat and shake off any excess flour.
Place them on the wire rack in a single layer and leave to dry out for 2 hours.
Preheat oven to 220C/430F.
Drizzle the drumsticks with olive oil and bake for approximately 45 minutes until deeply golden brown.
Remove from oven and turn over. Continue baking until crispy.
