Baked Lemon Pepper Chicken Thighs

  1. Preheat oven to 200C/400F.

  2. Line a shallow baking dish with foil and set aside.

  3. Pat the chicken dry with paper towels and place on a baking sheet.

  4. Whisk together the olive oil and lemon juice in a small bowl.

  5. Drizzle the olive oil mixture evenly over both sides of the chicken, rubbing to coat well.

  6. In another bowl stir together the lemon pepper seasoning, salt, garlic powder, onion powder, Italian seasoning and paprika.

  7. Sprinkle the spices evenly over the outside of the chicken thighs and fold them back together.

  8. Place them on the prepared baking dish with foil and give them a last sprinkle of extra lemon pepper, paprika and Italian seasoning.

  9. Bake for approximately 35-45 minutes.

  10. Serve and spoon the juices from the pan over the chicken.
