Ingredients
  • 1 Chicken Breast
  • 300 300g/10.5oz Sliced Mushrooms
  • 1 Onion, sliced
  • 4 Garlic Cloves, minced
  • 2 Tbsp Plain Flour
  • 200 ml Chicken Stock
  • 1 Tbsp Dijon Mustard
  • 180 ml Double Cream (Heavy Whipping Cream)
  • 2 Tbsp Chopped Parsley
  • Salt & Pepper
Method
  1. Cut the chicken into strips and place into a bowl. Add the flour and season with salt and pepper. Stir well to coat the chicken.
  2. In a skillet, heat a little olive oil and butter. Sauté the chicken until it's golden brown. Remove from pan and set aside.
  3. To the same pan, add the onions and cook until softened.
  4. Add the mushrooms and cook for a few more minutes, stirring occasionally.
  5. Add in the garlic and cook for one more minute. Pour in the chicken stock, double cream and dijon mustard. Stir well.
  6. Add the chicken to the pan, bring to a boil then simmer until cooked through and the sauce has thickened.
  7. Season to taste and add chopped parsley. Serve it up with rice, mash or pasta.
