Chocolate Peanut Butter Bundt Cake

This chocolate peanut butter bundt cake gives you the double doses of both flavours! It's a delicious dense and moist cake made with chocolate and peanut butter batters, and topped with peanut butter, and chocolate ganache.

Ingredients
    For The Chocolate Batter
  • ¾ Cup Sugar
  • ¼ Cup Vegetable Oil
  • 1 Egg
  • 1 Tsp Vanilla Essence
  • ½ Cup Milk
  • ¾ Cup Plain Flour
  • ½ Cup Cocoa Powder
  • ¾ Tsp Baking Powder
  • ½ Tsp Baking Soda
  • ½ Tsp Salt
  • ½ Cup Boiling Water
  • For The Peanut Butter Batter
  • 55g/2oz Butter
  • ¼ Cup Creamy Peanut Butter
  • ¾ Sugar
  • 1 Egg
  • 1 1/3 Cups Self Raising Flour
  • 1 Cup Buttermilk ((If you are not able to find Buttermilk, use a cup milk and stir in 1 Tbls white vinegar. Leave to stand for 5 minutes))
  • Topping:
  • ¾ Cup Smooth Peanut Butter (Melted)
  • 50g/1.76oz Milk Chocolate Chips
  • 3 TBSP Elmlea Double Cream ((heavy cream))
  • Reese's Mini Peanut Butter Chocolates
  • Smarties
  • Crushed Peanuts
Method
    Cake Pan:
  1. Preheat oven 180C/350F.

  2. Grease and dust your cake pan with flour and cocoa powder.

  3. Cream sugar and oil together in a large bowl. Beat in egg, vanilla and milk.

  4. In a medium bowl mix together flour, cocoa powder, baking powder, baking soda and salt.

  5. Slowly add flour mixture to the oil mixture until well combined, then carefully a little at a time STIR in the boiling water. Set aside.

  6. Peanut Butter:
  7. In a large bowl cream together the butter, peanut butter, and sugar. Beat in egg. 

  8. Carefully add 1/3 of the flour, followed by 1/3 of the buttermilk mixing well between each addition.

  9. Cake Batter:
  10. Pour a small amount of chocolate batter into the prepared cake tin.

  11. Dot large spoonfuls of peanut butter and top, more chocolate batter and continue until all the batter is in the pan. Bake in oven for approximately 1hour.

  12. Remove from pan and cool completely.

  13. Topping For Cake:
  14. Warm the peanut butter in the microwave a little so that it is soft enough to drizzle of the cake and pour it over cooled cake.

  15. Put the chocolate chips and cream in a small bowl, warm in the microwave, remove and stir until smooth. Leave to cool. Pour into a piping bag, cut off the tip and drizzle over the cake.

  16. If you don't have a piping bag you can drizzle it with a spoon.

  17. Top with chocolates, smarties and a few chocolate chips.
