Creamy Ricotta Pasta with Cherry Tomatoes

This Ricotta Tomato Pasta takes minutes to make and is a perfect way to use up all those summer cherry tomatoes!

Ingredients
  • 300g/10.5oz Spaghetti
  • 400g (2 Cups) Cherry Tomatoes
  • 4 Cloves Garlic (minced)
  • ¼ Cup Extra-Virgin Olive Oil
  • 250g (1 Cup) Ricotta (room temperature)
  • 1 Tsp Dried Basil
  • 1 Tsp Dried Oregano
  • ½ Tsp Chilli Flakes
  • ½ Cup Chopped Fresh Basil
  • Salt & Pepper
Method
  1. Cook pasta al dente and reserve 1 cup cooking water. (For this recipe I like to break the spaghetti in half as it makes it easier to mix through with the ricotta). 

  2. Whilst the pasta is cooking, add the minced garlic, herbs, chilli and olive oil to large pan. Cook for 2 minutes just until the garlic becomes fragrant. 

  3. Add the whole cherry tomatoes. Cover the pan and cook the  tomatoes until they start to soften and begin to burst. 

  4. When the pasta is ready, drain, reserving the liquid. Add the pasta to the pan with tomatoes and chopped basil. Stir through, then add the ricotta. Stir to coat the pasta and melt the ricotta.

  5. Add reserved water a little at a time till you reach a creamy consistency. 

  6. Serve and garnish with extra fresh basil. 

  7. Enjoy!
