Cuban Mojo Roasted Chicken

If you are looking for a new flavour for roast chicken, I highly recommend this Mojo Chicken. You will love the combination of flavours! Mojo is made from oranges, lime, cumin, cilantro, garlic, oregano and olive oil. Chicken is infused with this flavourful marinade then roasted until golden brown, juicy and tender!

Ingredients
    Main:
  • 1 Whole Chicken
  • Cuban Mojo Marinade:
  • Zest of 1 Orange
  • Zest of 1 Lime
  • ½ Cup Orange Juice
  • ¼ Cup Lime Juice
  • ¼ Cup Olive Oil
  • 6 Garlic Cloves (minced)
  • 1 Tsp Dried Oregano
  • 1½ Tsp Cumin
  • ¼ Cup Chopped Cilantro (see note)
  • Salt & Pepper
Method
  1. Rinse and pat dry chicken.

  2. In a small bowl, mix all Cuban mojo marinade. Pour the marinade all over the chicken.

  3. Cover with clingfilm and marinade for at least 8 hours or overnight, (the last 4 hours turn the chicken over breast side down in the marinade).

  4. Remove the chicken from the fridge 30 minutes before baking.

  5. Preheat oven to 220C/425F. 

  6. Remove chicken from the marinade and place in a large roasting dish. Tie the legs together with a kitchen string.

  7. Bake the chicken on the lowest shelf in the oven for 1 hour 15 minutes or until fully cooked through. (Time varies on the size of chicken.)

  8. Remove from oven. Rest for 5 minutes and serve with the delicious remaining juice in the pan. 

  9. Enjoy!

Note

NOTE: If you are not able to find cilantro, substitute with parsley.
