Ingredients
    Main:
  • 120g/1¼ Cups Rolled Oats
  • 250ml Hot Milk
  • 200g/7oz Ripe Bananas (without peel)
  • 2 Eggs
  • 100g/3.5oz Stevia (or sweetener of your choice)
  • 30g/4Tbls Cocoa Powder
  • 5g/1Tsp Baking Powder
  • Pinch Salt
  • 8 Inch Cake Tin
  • Baking Pan 22cm x 16cm
  • Topping:
  • Nuts of your choice (chopped)
  • 100g/3.5oz Dark Chocolate (chopped)
  • 50ml Hot Milk
Method
    Cake:
  1. In a large bowl mix the oats with the hot milk. Leave to soak for 10 minutes.

  2. Squash the bananas with a fork.

  3. In another bowl whisk the eggs and stevia with a hand balloon whisk. Add the bananas, mix well then add the salt, cocoa and baking powder. Mix until well combined.

  4. Stir the oats first then pour the chocolate batter over the oats and stir with a spatula.

  5. Grease a baking tin or dish with butter and pour in the batter. Top with chopped nuts and bake in oven 180C/350F for 35 to 40 minutes.

  6. Topping:
  7. Place the chopped chocolate in a small bowl and pour over the hot milk. Soak and mix well with a spoon until smooth.

  8. Place cooled chocolate in a piping bag and drizzle over cake or drizzle with a spoon.
