Ingredients
    Main:
  • 140g/5oz Rolled Oats
  • ¾ Cup Fresh Orange Juice (keep the pulp)
  • Zest of an Orange
  • 2 Eggs (room temperature)
  • 70g/2.5oz Walnuts (chopped)
  • 2 Tbsp Coconut
  • 3 Tbsp Stevia or your choice or 5 Tbsp Granulated Sugar
  • 1½ Tsp Baking Powder
  • ½ Tsp Baking Soda
  • 2 Tbsp Vegetable Oil
  • 20cm/8-Inch Springform Cake Tin
  • Chocolate Ganache:
  • 100g/3.5oz Dark Chocolate (finely chopped)
  • 50ml Hot Milk
Method
    Cake:
  1. Line the base and sides of an 8-inch springform cake tin with baking paper.

  2. In a large bowl soak the oats in the orange juice and leave to rest for 15 minutes.

  3. In another bowl whisk by hand the eggs and sugar till well combined.

  4. To the bowl of oats fold in the orange pulp, followed by the eggs.

  5. Now add the walnuts, coconut, orange zest, baking powder/soda, and stir through, then add the vegetable oil.

  6. Pour into prepared cake tin and bake at 180C/350F for 40 minutes.

  7. Leave to cool completely before covering with chocolate ganache.

  8. Chocolate Ganache:
  9. Place the chopped chocolate in a small bowl and pour over the hot milk.

  10. Leave to stand a few minutes till the chocolate softens, then stir with a hand balloon whisk till smooth.

  11. Pour and spread over the cooled cake.

  12. Enjoy!
