Diet Cake with Oats, Yoghurt, Apples & Blueberries

Ingredients
    Main:
  • 100g/3.5oz Rolled Oats (crushed)
  • 2 Eggs
  • 1 Medium Red Apple (finely chopped with peel)
  • ½ Peeled Red Apple (diced)
  • 120g/4.2oz Greek Yoghurt
  • 40g/1.41oz Stevia (or sweetener of your choice)
  • 50ml Vegetable Oil
  • 7g/0.25oz Baking Powder
  • 1 Tsp Vanilla Essence
  • 100g/3.5oz Fresh Blueberries
  • ¼ Tsp Ground Cinnamon
  • ¼ Tsp Salt
  • Slivered Almond (Topping)
  • 20cm/8inch Springform Cake Tin
Method
  1. Preheat oven 180C/350F.

  2. In a large bowl whisk the eggs, sugar and salt till well combined.

  3. Add the yoghurt, oil, vanilla essence and whisk till creamy.

  4. With a spatula first fold in apples, then oats, cinnamon and baking powder altogether.

  5. Line the base of your cake tin with baking paper and bring it outside the tin.

  7. Pour the batter into prepared cake tin. Scatter the blueberries on top and with your finger push them down just below the surface.

  8. Now scatter the diced peeled apples followed by the slivered almonds.

  9. Bake in oven for approximately 35 minutes or until skewer stick inserted comes out clean.

  10. Being that this is a small cake and isn't baked for too long the almonds might not brown enough.

  11. If you prefer them a little more crunchy, just as soon as the cake is ready put it under the grill for a few minutes.
