Diet Cake with Oats, Yoghurt & Prunes

This cake is incredibly soft and moist!! Easy to make, no need for mixers just mix everything by hand. Also good for Diabetics.

Ingredients
  • 130g/4.6oz Oats
  • 160ml Hot Water
  • 150g/5.3oz Greek Yogurt
  • 2 Eg60g/2.1oz Erytritol or Stevia sweetener or 120g/4.2oz Caster Sugar gs
  • 2 Tbsp Sunflower Oil
  • 60g/2.1oz Walnuts (chopped)
  • 150g/5.3oz Prunes (chopped)
  • 40g/1.4oz Almond Flour (Ground Almonds)
  • Pinch of salt
  • 1½ Tsp Baking Powder
  • ½ Tsp Baking Soda
  • 9 x 4inch Loaf cake tin or just slightly bigger, greased with butter or lined with baking paper
  • Few Slivered Almonds (Decoration)
Method
  1. In a large bowl soak the oats in hot water for 10 minutes.

  2. In a separate bowl with a hand balloon whisk mix the eggs and sugar together.

  3. With a spatula fold in the yoghurt into the oat mixture. Fold in the oil and add in the prunes and walnuts.

  4. Add the almond flour, salt, baking powder and soda and fold in until everything is well combined.

  5. Pour into cake pan, place a few almond flakes on top for decoration and bake in oven 180C/350F for 45 minutes.
