These Muffins taste just like chocolate cake, you would never guess that they are made without dairy, gluten, oil or refined sugar!

Ingredients - Serves 12 Muffins - 223Kcal Each

Method

  1. Preheat oven 180C/350F and grease a muffin tin with nonstick cooking spray.

  2. In a high-speed blender, start with the wet ingredients first, combine everything except chocolate chips, and blend for about 30 seconds, or until a smooth batter forms.

  3. Add chocolate chips and gently stir by hand. Pour batter into muffin tin and sprinkle a few more chocolate chips on top.

  4. Bake in the oven for 20 minutes, the tops will be nice and puffy with cracks.

  5. Enjoy!
