Healthy Strawberry Muffins

Ingredients - Serves 12 Muffins (165 cal each)


  1. Preheat Oven to 190C/375F. 

  2. Spray a 12-cup muffin tin with cooking spray or fill with cupcake liners. 

  3. Place chopped strawberries in a bowl and toss with a ¼ cup flour to coat. 

  4. In a large bowl, add the apple sauce with the melted butter. Add the syrup or honey, milk vanilla and eggs and whisk until well combined. 

  5. Add the baking powder, baking soda, cinnamon and salt and whisk again until well combined. With a rubber spatula fold in the wholemeal and plain flour.

  6. Now fold in the strawberries until just combined.

  7. Spoon the batter into prepared muffin tin wells and bake for 20 minutes, until a toothpick inserted in the center of a muffin comes out clean. 

  8. Leave the muffins to cool for 5 minutes in the pan, then remove to a wire rack to cool completely. 

  9. Enjoy!
