Ingredients
    Dressing/Marinade:
  • ¼ Cup Honey
  • 2 Tbsp Whole Grain Mustard
  • 2 Tbsp Dijon Mustard
  • 2 Tbsp Olive Oil
  • 2 Tbsp Apple Cider Vinegar (or White Vinegar)
  • 1 Tsp Garlic (crushed)
  • Salt (to season)
  • Salad:
  • 500g/17.6oz Chicken Tenderloins
  • 100g/3.5oz Bacon (chopped)
  • Lettuce (roughly chopped)
  • Avocado (sliced)
  • Small Tin Sweetcorn
  • Spring onions (sliced)
  • Orange Bell Pepper (chopped)
  • Cucumber (sliced)
  • Boiled Eggs (as an accompaniment)
  • Peppered Cheese
  • Chives (chopped to garnish)
Method
  1. Whisk dressing/marinade ingredients together to combine. Pour half the marinade into a shallow dish to marinade the chicken fillets for at least 2 hours. Refrigerate the remaining marinade to use as a dressing.

  2. Heat a non-stick pan with a tablespoon olive oil and sear the chicken from both sides. Remove from pan. Wipe pan with a paper towel, drizzle with another teaspoon olive oil and fry the bacon until crispy.

  3. Prepare the salad with roughly chopped lettuce and rest of ingredients. Place the chicken fillets on top.

  4. Whisk 2 tablespoons of water into the remaining dressing and drizzle all over the top of the salad. 

  5. Sprinkle the bacon over the top and garnish with fresh chopped chives.

  6. Enjoy!
