Key Lime Pie

Ingredients
    Base:
  • 250g/8.8oz Digestive biscuits (crushed)
  • 150g/5.3oz Butter (melted)
  • Filling:
  • 2 (395g/14oz) Tins Sweetened Condensed Milk
  • 1 Jar (170g, ¾ Cup) Soured Cream
  • ¾ Cup Lime juice, I used 5-6 Limes depending on size
  • Grated zest from 2 Limes
  • Whipped Cream Topping:
  • 1 (270ml) Double Cream (Heavy whipping Cream)
  • ¼ Cup Icing Sugar
  • 1 Tsp Vanilla Essence
Method
    Base:
  1. Mix the crushed biscuits and melted butter. Press down onto base and up the sides of a 27cm springform pan and bake in oven 190C/375F for 7 minutes.

  2. Leave to cool completely before adding filling.

  3. Filling:
  4. Whisk together the condensed milk, sour cream, lime juice and zest. 

  5. Pour onto prepared crust and bake in oven 180C/350F for 10 minutes.

  6. Remove from oven and leave to cool completely. Refrigerate for at least 3 hours before topping with cream.

  7. Whipped Cream Topping:
  8. Beat heavy cream and icing sugar until stiff peaks form then beat in vanilla.

  9. Spread or pipe whipped cream on top of cooled pie.

  10. Top with additional lime zest if desired.
