Ingredients
  • 500g/17.6oz Rice
  • 1 Onion (diced)
  • 400g/14.1oz Ground Beef
  • 200g/7oz Can Corned Beef
  • 3 (400g/14oz) Cans Whole Peeled Tomatoes
  • 2 Tbsp Tomato Paste
  • 1 Beef Cube
  • 1 Tsp Mild Curry Powder
  • ½ Tsp Dried Basil, Oregano and Parsley
  • 100g/3.5oz Shredded Cheddar Cheese
  • Few Dashes Soy Sauce
  • 500g/17.6oz Ricotta (Optional)
  • 4 Beaten Eggs
  • 170g/6oz Can Nestle Ideal Condensed Milk ((not the thick sweetened condensed milk used for desserts))
  • Grated Parmesan Cheese
Method
  1. Cook the onion in a little olive until softened, then add the ground beef. When cooked through add the spices, herbs, crumbled beef cube, soy sauce and tomato paste. Cook for about one minute then add the corned beef. Stir through until well combined.
  2. Add the whole peeled tomatoes and season with salt and pepper. Cover and simmer for 1 hour 30 mins.
  3. Meanwhile cook the rice but not completely, drain and transfer to a large bowl. Add the ready made meat sauce, stir in the grated cheddar and beaten eggs.
  4. Spoon half of the filling in a large greased baking dish. Thickly slice the ricotta and place on top and cover with the remaining filling. Scatter parmesan cheese on top and pour the canned milk all over the surface. Season with freshly ground pepper.
  5. Bake in oven 190C/375F until cooked and top is golden, about 1 hour.
