Ingredients
    Filling:
  • 800g/1.7lbs Ricotta, drained overnight
  • 100g/3.5oz Broad Beans
  • 75g/2.6oz Grated Pecorino Romano or Parmesan Cheese
  • 3 Eggs
  • Salt & Pepper
  • Shortcrust Pastry:
  • 500g/1.1lb Plain Flour
  • 230g/8oz Cold Butter
  • Cold Water to bind the dough
  • 1 Egg for eggwash
Method
  1. In a large bowl, mix all filling ingredients together.
  2. Generously butter grease a 28cm/11-inch pie dish. Lay your prepared pastry and fill with ricotta-cheese filling.
  3. Cut remaining pastry into strips and make a lattice pattern on top. Fold over sides and tuck in.
  4. Brush pastry with beaten egg and bake in oven 180C/350F bottom shelf until pastry is cooked and golden.
  5. Enjoy!
