Maltese Widow’s Soup

A traditional Maltese hearty soup made with fresh vegetables. In this soup it is customary to add eggs and the popular Maltese Cheese Gbejna at the end.

Ingredients:
  • 1 Onion (Diced)
  • 3 Cloves Garlic (Crushed)
  • 2 Potatoes (Chopped)
  • 3 Carrots (Sliced)
  • 1 Kohlrabi (Chopped (Gidra))
  • 1 Cup Broad Beans
  • ¾ Cup Frozen Peas
  • Cauliflower (Small (Cut into bite sized pieces))
  • ¼ Cup Parsley (Chopped (Plus extra for garnish))
  • 1 Tsp Curry (Mild)
  • ¼ Tsp Mixed Spice
  • 2 Tbsp Tomato Paste
  • Chicken Stock ((Enough to cover vegetables))
  • Salt & Pepper
  • Gbejniet ((Fresh Maltese Cheeselets))
  • Eggs
Method:
  1. Saute garlic and onion in a tablespoon butter and olive oil until soft.

  2. Add potatoes, carrots, kohlrabi, broad beans, peas and cauliflower.

  3. Stir through then add the curry, mixed spice, tomato paste and stock.

  4. Stir well and season with salt and pepper.

  5. Bring to boil, cover and simmer for about 30 minutes or until vegetables are just cooked.

  6. Add gbejniet (maltese cheeselets) and eggs, cover and cook for a further 20 minutes.

  7. Garnish with parsley and stir through.

  8. Enjoy!
