Mediterranean Couscous Salad

This Mediterranean couscous salad is super flavourful and is sure to be your new favourite side dish or light meal for summer! Couscous is combined with feta cheese, cucumber, kalamata olives, juicy tomatoes, spices and fresh herbs.

Ingredients
  • 500g/1lb Al Amier Couscous (from Dical House)
  • ½ Vegetable Stock Cube
  • 650ml Boiling Water
  • 3 Tsp Al Amier Baharat Spice Mix (from Dical House)
  • 1 Small Red Onion (finely chopped)
  • Cucumber (sliced and quartered)
  • Cherry Tomatoes (halved)
  • ¼ Cup I Clivi Extra-Virgin Olive Oil (from Dical House)
  • Kalamata Olives
  • 350g/12.3oz Jar Feta Cheese in Oil
  • 3 Tbsp Chopped Basil Leaves
  • 2 Tsp Chopped Mint
  • Juice of ½ Lemon
  • Pepper
Method
  1. Add the Couscous to a large bowl. 

  2. Make the vegetable stock and pour it over the couscous. Stir once then cover the bowl with clingfilm.

  3. Let it soak for approximately 5 minutes. 

  4. Use a fork to fluff up the couscous. Add the I Clivi Extra-Virgin Olive Oil, then leave to cool. 

  5. Once the couscous has cooled, add the Baharat Spice Mix to taste (adding more if needed), chopped fresh herbs and lemon juice.

  6. Next add the chopped vegetables, leaving the olives and feta cheese for last. Season with fresly ground pepper and mix everything together. 

  7. Transfer to a large serving dish and serve immediately or cove with clingfilm and keep refrigerated until ready to use.

Note

Baharat Spice Mix is a mixed seasoning of paprika, coriander, cumin, nutmeg, chilli, cardamom, clove and pepper. A great seasoning mix that is used for couscous, meat, fish, chicken, bulghur and potato dishes.
