Mincemeat & Apple Tart

A twist for your mincemeat sweet apart from the traditional Mince Pies

Ingredients
    Filling:
  • 1 Jar 400g/14.1oz Mincemeat
  • 4-5 Green Apples
  • 50g/1.76oz Walnuts
  • 1 Tbsp Sugar
  • ¼ Tsp Cinnamon
  • A Squeeze of Lemon Juice
  • 2 Tsp Apricot Jam
  • Melted Butter
  • Pastry:
  • 300g/10.6oz Plain Flour
  • 75g/2.6oz Butter
  • 75g/2.3oz Trex (Fat made from vegetables)
  • Ice cold water
Method
  1. Prepare the pastry and refrigerate for 30 minutes.

  2. Butter grease a 28cm/11inch tart pan.

  3. Lay the pastry and refrigerate for at least 30 minutes before adding the filling.

  4. Peel, core and slice the apples (for the center flower I sliced them even thinner to make it easier to turn them in a circle).

  5. Place the sliced apples in a bowl. Sprinkle with some sugar, cinnamon and lemon juice.

  6. Remove the prepared pastry from the fridge, spread a thin layer of mincemeat on top of the pastry, scatter roughly chopped walnuts and layer the apples on top.

  7. Brush the apples with melted butter and bake in oven 180C/350F till apples are golden and pastry is cooked.

  8. Remove from oven and while the tart is still warm, heat the apricot jam with a little water and brush the top of the apples to give them a shiny glaze.
