Nick Peanut Butter Bundt Cake with Peanut Butter & Cream Cheese Frosting

Ingredients
    Bundt Cake:
  • 2 Cups Plain Flour, sifted
  • ¾ Cup Nick Creamy Peanut Butter (from Dical House)
  • 1 ½ Cups Sugar
  • 1 Tsp Baking Soda
  • 115 Butter, 115g/4oz, softened
  • ½ Cup Sour Cream
  • 1 Tsp Vanilla Essence
  • 2 Eggs, room temperature
  • 1 Cup Milk, room temperature
  • Peanut Butter Frosting:
  • 120 Full 120g/4.2oz Fat Cream Cheese
  • 3 Tbsp Nick Creamy Peanut Butter (from Dical House)
  • 1 Cup Icing Sugar/Powdered Sugar
  • 4 Tbsp Milk
  • Decoration:
  • ½ Cup Dark Chocolate Mini Chocolate Chips
  • M&M's
  • Crushed Peanuts
Method
    Cake:
  1. Preheat oven to 180C/350F.
  2. Butter grease and dust with flour a 25cm bundt pan.
  3. In a bowl combine the flour, sugar and baking soda. Set aside.
  4. In a mixing bowl cream together the butter and Nick peanut butter until fluffy. Add the sour cream, vanilla and eggs, mixing until smooth and creamy.

  5. Add 1/3 of the flour and 1/3 of the milk to the peanut butter mixture. Slowly mix and repeat until all of the flour and milk are combined.
  6. Fold in the chocolate chips.
  7. Spoon the batter into your prepared bundt pan.
  8. Bake for 1 hour and 10 minutes, or until a toothpick inserted the center comes out clean.
  9. Let the cake rest for 10 minutes before turning over onto a serving plate. Leave to cool completely before topping with the peanut butter frosting.
  10. Decorate with Chocolate chips, M&M's and crushed peanuts.
  11. Peanut Butter Cream Cheese Frosting:
  12. Using an electric whisk on medium speed, beat the cream cheese, peanut butter and icing sugar until combined and smooth.

  13. Add the milk and mix well. If needed add more milk a little at a time until the you reach the right consistency that is thick and pourable.
