One Pan Baked Chicken Drumsticks & Potatoes

Flavourful marinated chicken drumsticks with herbs and spices and baked in the oven with potatoes. Easy to put together and so delicious!

Ingredients
    Main:
  • 12 Chicken Drumsticks
  • Potatoes, diced
  • 1 Large Onion, sliced
  • 5 Garlic Cloves, sliced lengthwise
  • 2 Whole Jalapenos
  • Cherry Tomatoes, halved
  • Marinade:
  • 2 Tbsp Tomato Paste
  • 2 Tsp Dried Thyme
  • 2 Tsp Cumin
  • 1 Tsp Schwartz Piri Piri Seasoning (see note)
  • 6 Tbsp Olive Oil
  • Salt & Pepper
  • 8 Tbsp Milk
Method
  1. Mix the first six marinade ingredients in a large bowl, then add the milk and continue to mix until well incorporated.
  2. Coat the chicken in the marinade. Cover with clingfilm and leave to rest in the fridge for at least 1 hour, the longer the better.
  3. Prepare a large shallow baking dish and grease with olive oil.
  4. Scatter the sliced onions and garlic to cover the base of the dish.
  5. Place the drumsticks on the sides of the dish.
  6. To the same bowl where you had the chicken, add the diced potatoes and coat well with the marinade. Place them in the middle, between the chicken.
  7. Baste the top of the chicken with the remaining marinade.
  8. Place a jalapeno on each side of the drumsticks and fill in with halved cherry tomatoes between the drumsticks and potatoes.
  9. Season the potatoes with salt and pepper and bake in preheated oven 200C/400F top shelf for 45 minutes or until chicken and potatoes is cooked.

Note

Piri Piri Seasoning is a mixed seasoning with dried chillies, onions, garlic, orange and lemon peel, cumin, oregano, paprika and coriander. If you cannot find it, substitute with 1/2 teaspoon chilli flakes.
