Peach Custard Tart

This peach custard tart has a spiced shortcrust pastry and a creamy custard filling loaded with sweet peaches on top. It's a delicious end to any meal!

Ingredients
    Shortcrust Pastry:
  • 300g/10.6oz Plain Flour (sifted)
  • 75g/2.6oz Butter
  • 75g Trex (Vegetable Fat)
  • Cold water to bind pastry
  • All ingredients cold from the fridge
  • Filling:
  • Peaches ((Fresh) peeled & sliced)
  • ½ Cup Sugar
  • ½ Cup Elmlea Double Cream ((heavy cream))
  • 1 TBSP Plain Flour
  • 1 Egg
Method
  1. Prepare the pastry and place into a butter greased 28cm/11inch tart pan.

  2. Prick the bottom with a fork and refrigerate for 30 minutes.

  3. Remove from the fridge, cover with baking paper and fill with beans.

  4. Bake blind in preheated oven 200C/400F for 15 minutes, remove baking paper and bake a further 10 minutes.

  5. Remove crust from oven and arrange peace slices on top of pastry whilst it's still warm.

  6. Reduce temperature to 180C/350F.

  7. Combine filling ingredients in a bowl with a whisk. 

  8. Pour filling mixture over sliced peach and bake for 45 minutes or until crust is golden brown and filling is set. If not eaten in a day, keep refrigerated.

  9. Enjoy!

Note

Peach tart can also be made without any top pastry design and instead add slivered almonds on top.
