Peach & Vanilla Pudding Parfaits

This dessert is so perfect if you want to have something that is light and refreshing. The homemade pudding is so simple to make, you will want to make it again!

Ingredients
  • ½ Cup Sugar
  • ¼ Cup ¼ Cup Cornflour (Cornstarch)
  • ¼ Tsp Salt
  • 2 ½ Cups Whole Milk
  • 4 Egg Yolks
  • 2 Tbsp Unsalted Butter
  • 1 Tsp Vanilla Essence
  • 1 Pkt 65g/2.3oz Peach Jelly
  • 150ml Elmlea Double Cream x (Elmlea Double Cream (heavy cream), whipped)
  • (Orange food coloring (optional))
Method
  1. In a pan add the sugar, salt, cornflour and mix together.

  2. Then add a little bit of milk and cream it all together. 

  3. Add the egg yolks and mix everything again then add the remaining milk.

  4. Cook on medium heat, stirring constantly until the mixture thickens up. Remove from heat and stir in the butter and vanilla.

  5. Spoon a little filling into your desert glasses and set aside the rest for later. Leave to cool and chill for 1 hour before adding the peach jelly layer.

  6. Prepare the peach jelly according to package instructions. 

  7. Leave to cool then add the whipped cream and mix well together. 

  8. Now you can add some orange coloring to brighten up the color.

  9. Pour the jelly into your glasses and refrigerate to set completely, for 2-3 hours. When Jelly cups are set top with the second vanilla layer and decorate with fresh peaches or nectarines. 

  10. A few added blueberries would also go nicely on top. The piped cream is optional.
