Pork stew are tender chunks of pork simmered with vegetables and herbs in a rich, flavorful broth. Comforting and hearty.
Heat a little olive oil in a deep pan and brown the pork. Remove and set aside.
To the same pan fry the onions. When they start to soften add the garlic and sauté just for 1 minute.
Add the potatoes and carrots, stir through then add the spices and tomato paste.
Now add the pork and mix everything together.
Add the wine, stock, both tins of tomatoes, bay leaves, salt and pepper.
Simmer covered for 1½ hours or until meat is tender.
When ready add the tin of peas, stir through and turn off heat. Leave to rest for 5 minutes and serve.
