Pork tenderloin with baby potatoes and green beans has tender pork paired with roasted potatoes and crisp green beans for a balanced meal.
Preheat oven to 230C/450F.
Spray a baking pan with nonstick cooking spray.
Arrange the green beans in the center of the dish.
In a large bowl toss the potatoes with 2 tablespoons olive oil, salt and pepper.
Transfer to the baking dish and arrange on both sides of green beans cut side down.
Baste the green beans with some of the hoisin sauce and lay the tenderloins on top not touching each other.
Brush well with hoisin sauce, sprinkle with salt & pepper and bake in oven for 30 minutes.
Half way through cooking time baste them again with the sauce.
While they are roasting before end of cooking time, melt the garlic butter in the microwave.
Remove tenderloin from oven and top each one with 1 tablespoon garlic butter and fresh chopped chives.
Let it rest before slicing. Top potatoes and green beans with remaining garlic butter and serve.
