Ricotta & Spinach Girasoli

Girasoli, Italian for "sunflowers," are delicious stuffed pasta, delicately filled with creamy ricotta cheese and spinach. These Girasoli in a garlic-infused cherry tomato sauce will delight your taste buds and served in 30 minutes!

Ingredients
  • 400g/14oz (4) Refrigerated Ricotta & Spinach Girasoli (see note)
  • 15 Cherry Tomatoes (halved)
  • 6 Garlic Cloves (halved)
  • 1 Tbsp Tomato Paste
  • ¼ Cup Olive Oil
  • Salt & Pepper
Method
  1. In a large pan, add the olive oil and garlic. Cook the garlic for a few minutes but do not burn.

  2. Add the cherry tomatoes and season with salt and pepper.

  3. Cover and simmer for just 1 minute, then add the tomato paste. Cover and continue to simmer for about 15 minutes. 

  4. Whilst your sauce is simmering cook the girasoli; Cook pasta for 3 minutes in lightly salted, simmering water.

  5. Once ready, lift out with a slotted spoon and transfer to your prepared tomato sauce.

  6. With a spatula, slowly stir through the sauce to evenly coat. 

  7. Serve with parmesan cheese on top and freshly ground pepper.  

  8. Enjoy!

Note
  • If you are not able to find large Girasoli, smaller ones the size of ravioli can be used instead.
