Sea Bass is one of the most popular and delicious fish that is available locally. The flesh is moist and tender with a mild sweet flavour that will please both fish lovers and those who are averse to sea food. When cooked, it almost melts in your mouth and you will be wanting more!
Preheat oven to 180C/350F.
Ask your fishmonger to clean and gut the sea bass. Rinse and pat dry with a kitchen towel.
Fill the cavity with lemon slices with some mint and parsley.
Place in a baking dish wrapped in foil.
Season with salt and pepper, a squeeze of lemon juice and a drizzle of olive oil.
Bake in oven covered for 30 minutes, then uncover and bake for a further 15 minutes.
To check if it's cooked, simply poke with a fork. It is cooked when the fish flakes.
Allow the fish to rest for 5 minutes before serving.
