Recipe
    Spaghetti Crust
  • 200g/7oz Spaghetti
  • 1 Tbsp (15g) Butter (Melted)
  • 2 Eggs
  • 2 Tbsp Parmesan Cheese
  • Ricotta Layer
  • 400g/14oz Ricotta
  • 2 Tbsp Basil (Fresh & Chopped)
  • Meat Sauce
  • 250g/8.8oz Ground Beef
  • 250g/8.8oz Ground Pork
  • 1 Onion (Medium size & Chopped)
  • 700g/24.7oz Jar Tomato Juice (Passata)
  • 3 Cloves Garlic (Minced)
  • 1 Tbsp Tomato Paste
  • 1 Tsp Oregano (Dried)
  • 2 Tbsp Basil (Fresh & Chopped)
  • 1 Tsp Sugar
  • ¼ Tsp Piri Piri Seasoning (Mixed Chilli Seasoning)
  • Salt & Pepper
  • Topping
  • 1 Cup (100g) Mozzarella (Shredded)
  • 1 Tbsp Parmesan
  • Freshly Ground Pepper
  • Fresh Basil for Garnish
Method:
    Meat Sauce
  1. Fry the onions in a little olive oil until softened. Add minced garlic and cook for just 1 more minute until fragrant.

  2. Add the ground beef and pork and cook until no longer pink.

  3. Add the tomato paste and tomato juice, stir through then add the dried oregano, chopped basil, piri seasoning, sugar and season with salt and pepper.

  4. Simmer uncovered for 30 minutes. Remove from heat and leave to cool slightly.

  5. Ricotta Layer
  6. In a small bowl mix the ricotta and chopped basil together.

  7. Spaghetti Crust and Assemble
  8. In a medium bowl mix the eggs, melted butter and parmesan cheese together.

  9. Cook pasta according to package instructions, drain and toss into the egg mixture.

  10. Butter grease a 20cm/8-inch springform cake tin. Place spaghetti into the tin and press to form a crust on the base and ¾ up the side.

  11. Spread ricotta over the base of the spaghetti. Top with meat sauce, shredded mozzarella, parmesan cheese and freshly ground pepper.

  12. Place the tin on a baking tray with baking paper just in case there is any leakage from the tin and bake in oven 200C/400F for 30-45 minutes until cheese is melted and golden on top.

  13. Remove from oven and leave to rest for 10 minutes before removing from tin. Serve on its own or with a crispy salad and warm garlic bread.
