This heavenly, no-bake Strawberry Tiramisu is a deliciously twist on the classic Italian dessert with fresh strawberries, lady fingers and mascarpone. A great make-ahead dessert for any occasion!

Ingredients
    Recipe:
  • 350g/12.3oz Savoiardi BiscuitsSavoiardi Biscuits/Lady Fingers
  • 400g/14oz Fresh Strawberries Chopped (Plus extra for on top)
  • 500g/17.6oz Mascarpone Cheese
  • 250ml Fresh Cream Whipped (Whipping Cream)
  • 150g/5.3oz White Chocolate (Grated)
  • 100g/3.5oz Sugar
  • 4 Eggs (Separated)
  • 1 Pkt Strawberry Jelly/Jello (Dissolved in 1½ Cups water according to instructions.)
Method
  1. Whisk the egg whites until stiff and set aside.
  2. Whisk the fresh cream until stiff and set aside.
  3. Place the egg yolks together with 100g sugar in a bowl over a pan of simmering water and whisk until doubled in volume. Remove from stove, leave to cool and transfer to a large bowl. Add the mascarpone cheese and beat together until well combined.
  4. All together, fold in the grated white chocolate, whipped egg whites, and whipped cream then fold in the chopped strawberries.
  5. Dip the ladyfingers just from one side into the cooled strawberry jelly and place them on the base of a trifle dish.
  6. Spread half of the mascarpone cream on top and level the surface. Place a second layer of ladyfingers dipped in strawberry jelly and spread remaining mascarpone cream on top. Refrigerate for 5 hours. Decorate as desired; with sliced strawberries and grated white chocolate or piped whipping cream (optional).

Note

If eating raw eggs is not a problem, you can skip the process of whipping them with sugar over the stove and just whip together in a bowl and continue as per recipe.
