Sweet Potato Boats

These sweet potatoes are baked till tender and topped with protein-rich lentils, fresh greens and a lemony hummus dressing,

Ingredients
    Main:
  • 2 Sweet Medium Potatoes
  • 1 400g/14oz Can Green Lentils, rinsed and drained
  • 2 Tomatoes, finely chopped
  • 1 Small Cucumber, finely diced
  • 2 Spring Onions, sliced
  • 2 Cloves Garlic, minced
  • ¼ Cup Fresh Mint, finely chopped
  • ¼ Cup Fresh Parsley, finely chopped
  • ½ Tsp Ground Cumin
  • Salt & Pepper
  • Hummus Sauce:
  • ½ Cup Hummus
  • 2 Tbsp Lemon Juice
  • 1 Tbsp Maple Syrup
  • Water
Method
  1. Preheat oven to 200C/400F.
  2. Slice the sweet potatoes in half lengthwise.
  3. Place the sweet potatoes face done on a baking tray lined with parchment paper. Bake for 45 minutes until tender.
  4. While the potatoes are baking, prepare the filling. Mix together the lentils, tomatoes, cucumber, onions, garlic, mint, parsley, cumin and season with salt and pepper to taste.
  5. In a small bowl, mix the hummus, lemon juice, and syrup. Add a little water if necessary to thin it to a pourable consistency.
  6. Once the sweet potatoes are baked, flip them over and gently mash the inside with a fork.
  7. Top the sweet potatoes with the lentil tabbouleh. Drizzle generously with the hummus dressing. Sprinkle with paprika and enjoy!
