Bursty creamy burrata, juicy cherry tomatoes, fresh basil, swish of olive oil, balsamic glaze, and crusty bread. Simple and luscious! An easy-to-make 15-minute side dish, appetizer, light snack or lunch!
[adrotate group="2"] [adrotate group="4"]In a bowl add the tomatoes, minced garlic, chopped basil, olive oil and season with salt and pepper. Mix through and set aside.
Place the burrata in the middle of a serving plate and arrange the marinated tomatoes around it.
Slice open the burrata, drizzle with olive oil and top everything with pistachios and balsamic glaze for garnish.
Slice bread to preferred thickness, then space out on a large baking tray.
Lightly brush both sides with olive oil then pop under the grill and broil both sides until golden and crisp.
Serve and tuck in by spreading burrata over the toast and marinated tomatoes on top (kind of like bruschetta).
