Ingredients
  • 2 Tbsp Olive Oil (divided)
  • ½ Small Onion (finely chopped)
  • 2 Garlic Cloves (minced)
  • 1 Tin 400g/14oz Cherry Tomatoes or Whole
  • 1 Basil Sprig
  • 1 Tsp Tomato Paste
  • 1 Tsp Sugar
  • 1 Tbsp Capers (rinsed)
  • 1 Tbsp Red Wine Vinegar
  • Salt & Pepper
Method
  1. Heat 1 tablespoon olive oil in a small saucepan.

  2. Add the onion. Cook until softened then add the garlic and cook, stirring for 1 more minute until fragrant.

  3. Stir in the tomatoes, tomato paste, salt and pepper.

  4. Squash the tomatoes with a fork, then add the basil sprig and capers. Simmer 20 minutes.

  5. Remove the basil sprig. Stir in the vinegar and remaining olive oil. 

  6. Taste and adjust seasonings. 

  7. Serve hot or cold.
