Tortellini Pasta Salad

This is one of those pasta salads that you will want to make more than once! It makes a great fresh lunch, dinner, barbecue accompaniment and is also perfect to take to the beach.

Ingredients
    Main:
  • 500g/1.1lb (2 pkts) Barilla Cheese Tortellini
  • 1 Small Red Onion (finely diced)
  • 700g/1.5lbs Salami (diced)
  • Orange Bell Pepper (diced)
  • 370g/13oz Can Black Olives (halved)
  • 300g/11oz Mozzarella balls (quartered)
  • 400g/14oz Cherry tomatoes (halved)
  • 125g/4.4oz Feta cheese (broken into small pieces)
  • Pasta Dressing:
  • ¼ Cup White Wine Vinegar
  • ¾ Cup Olive Oil
  • 1 Tsp Dried Oregano
  • 2 Cloves Garlic (crushed)
  • ½ Tsp Dried Red Chopped Chillies
  • Salt & Pepper
  • Combine ingredients in a pint size jar and shake vigorously.
Method
    Pasta Salad:
  1. Cook the tortellini but not completely, (about 3 minutes less than their actual cooking time). Drain and rinse under cold water. 

  2. Transfer tortellini to a large dish. 

  3. Add all the above-mentioned ingredients and dressing except the feta cheese. 

  4. Mix together, then add pieces of feta cheese and give it one final mix. 

  5. Cover with clingfilm and chill in the fridge for a few hours before serving. The longer it rests the better, as the tortellini absorbs the dressing and makes it tastier!
