Description

Ingredients
    Meat Sauce:
  • 450g/1lb Ground Beef
  • 1 Medium Onion, finely diced
  • 3 Tbsp Tomato Paste
  • 2 Tsp Paprika
  • 1 Tsp Ground Cumin
  • Pinch Red Pepper Flakes
  • 1 Tsp Sugar
  • ¼ Cup Water
  • Salt & Pepper
  • Garlic Yoghurt Sauce:
  • ¾ Cup Greek Yogurt
  • ¼ Cup Milk
  • 2 Cloves Garlic, minced
  • 1 Tbsp Lemon Juice
  • Pinch Salt
  • Spiced Butter Sauce:
  • 4 Tbsp Unsalted Butter
  • 1 Tsp Paprika
  • Pinch Red Pepper Flakes
Method
    Meat Sauce -
  1. Heat a little olive oil in a pan and cook the onions until softened.
  2. Add the ground beef and cook until no longer pink.
  3. Stir in the paprika, cumin, chilli flakes, tomato paste, water and season with salt and pepper to taste. Simmer for a few minutes and turn off heat.
  4. Garlic Yoghurt Sauce -
  5. In a bowl, whisk together the yoghurt, garlic, lemon juice, salt and milk (add enough milk to make it pourable but not runny). Refrigerate until ready to serve.
  6. Spiced Butter Sauce -
  7. In a small saucepan, melt the butter and stir in the paprika and chilli flakes. Simmer for 2 minutes, just until fragrant. Remove from heat.

  8. Serve and Garnish -
  9. Layer the pasta on a serving plate. Spoon the yoghurt sauce over the pasta followed by the meat sauce.
  10. Top with halved cherry tomatoes, spiced butter sauce, parsley and freshly ground pepper.
  11. Enjoy!
