This tortilla bowl salad is so simple and quick to make. Sweet cherry tomatoes, parma ham, cucumber and olives are tossed with rucola and finished with a fresh burrata in the middle. Slice open the burrata and the cream filling oozes from the cheese all over the salad. Tuck in and enjoy!

Lay the wrap on a flat surface and prick all over with a knife.
Grease 2 large bowls with 1 teaspoon vegetable oil per bowl.
Press each tortilla into the greased bowl and pleat the top edges to fit the bowl.
Bake for 10-15 minutes until golden brown. Let the tortillas cool completely inside the bowls.
Fill each tortilla bowl with rucola and toss with cherry tomatoes, cucumber and olives.
Place the burrata in the middle and top with parma ham.
Sprinkle dried oregano, freshly ground pepper and a drizzle of extra-virgin olive oil over the top.
