Burrata & Parma Salad in a Crispy Tortilla Bowl

This tortilla bowl salad is so simple and quick to make. Sweet cherry tomatoes, parma ham, cucumber and olives are tossed with rucola and finished with a fresh burrata in the middle. Slice open the burrata and the cream filling oozes from the cheese all over the salad. Tuck in and enjoy!

Ingredients
    Tortilla Basket:
  • 2 Large Flour Tortilla
  • 2 Tsp Vegetable Oil
  • Burrata & Parma Salad:
  • 100g/3.5oz Rucola/Rocket/Argula
  • 90g/3.2oz Prosciutto di Parma
  • 2 Burrata Balls
  • Cherry Tomatoes (halved)
  • Cucumber (sliced in half)
  • Mixed Marinated Olives
  • Extra-Virgin Olive Oil
  • Dried Oregano
  • Freshly Ground Pepper
Method
    Tortilla Basket:
  1. Preheat oven 180C/350F.

  2. Lay the wrap on a flat surface and prick all over with a knife.

  3. Grease 2 large bowls with 1 teaspoon vegetable oil per bowl. 

  4. Press each tortilla into the greased bowl and pleat the top edges to fit the bowl. 

  5. Bake for 10-15 minutes until golden brown. Let the tortillas cool completely inside the bowls. 

  6. Burrata & Parma Salad:
  7. Fill each tortilla bowl with rucola and toss with cherry tomatoes, cucumber and olives. 

  8. Place the burrata in the middle and top with parma ham. 

  9. Sprinkle dried oregano, freshly ground pepper and a drizzle of extra-virgin olive oil over the top. 

  10. Enjoy!
