Crunchy Fruit & Nut Rounds

If you love nuts and crave sweet snacks, these homemade fruit and nut rounds are for you! Seeds and nuts are a good source of protein and fiber, vitamins and are great for healthy snacking or a nutritious breakfast.

Ingredients
  • 80g/2.8oz Dried Apricots (finely chopped)
  • 80g/2.8oz Whole Almonds
  • 80g/2.8oz Roasted Hazelnuts (chopped)
  • 80g/2.8oz Walnuts (chopped)
  • 50g/1.8oz Pumpkin Seeds
  • 50g/1.8oz Sunflower Seeds
  • 25g/0.88oz Sesame Seeds
  • ¼ Tsp Salt
  • 2 Tbsp Maple Syrup
  • 2 Egg Whites
Method
  1. Preheat oven to 180C/350F.

  2. In a large bowl, mix the nuts, seeds, apricots and salt. Add the maple syrup and egg whites and mix well together. 

  3. Line a baking tray with baking paper. Place the mixed nuts in a round cookie cutter to shape into flat discs. 

  4. Bake for 15 minutes, until golden brown. 

  5. Allow to cool completely to firm up before lifting off the baking paper. 

  6. Enjoy!
