Diet Cake with Oats, Apples, Carrots & Yoghurt

Ingredients
  • 120g/4.2oz Oats (grind into fine crumbs)
  • ½ Cup Greek Yogurt (mixed with ¼ Cup Milk)
  • 2 Eggs
  • 50g/1.76oz Stevia (or 100g/3.5oz Castor Sugar)
  • 2 Small Carrots (finely shredded)
  • 2 Medium Green Apples (shredded with peel)
  • ¼ Tsp Ground Cinnamon
  • ¾ Tsp Baking Powder
  • Pinch Salt
Method
  1. Preheat oven to 180C/350F.

  2. Butter grease an 8-inch springform cake tin.

  3. In a large bowl add the crushed oats, and a pinch of salt and stir together.

  4. Add the yoghurt and with a spatula mix together until well combined.

  5. In a separate bowl with a hand balloon whisk, mix the eggs and sugar.

  6. Add the eggs to the oats, then fold in the shredded carrots, apples, cinnamon, and baking powder.

  7. Pour into the cake tin and bake in the oven for 45 minutes.

  8. Leave to cool then brush the top with honey and decorate as desired.

  9. Enjoy!
