Fig Ricotta Crostini

How can you go wrong with these toppings? Creamy ricotta and fresh figs on toasted bread with a touch of honey and pistachios - It's perfection! A simple and delicious summertime appetizer or snack!

Ingredients - Serves 12 Crostini
  • 1 Baguette
  • 6 Fresh Figs (cut into segments)
  • 250g (1 Cup) Ricotta (see note)
  • ¼ Cup Olive Oil
  • Honey for drizzling
  • Crushed Pistachios and Fresh Thyme for garnish
Method
  1. Slice the bread and place on a sheet of baking paper. Brush both sides with olive oil. 

  2. Place under an oven grill and grill from both sides until toasted. Remove and allow to cool. 

  3. Spread ricotta cheese on top and arrange 2 or 3 slices of figs on top. 

  4. Sprinkle with crushed pistachios, thyme, flaky sea salt and a drizzle of honey.

  5. Enjoy!

Note
  • Ricotta can be replaced with cream cheese, cottage cheese or stracciatella (burrata filling).
