Lampuki is the Maltese name for the dorado, dolphinfish, or mahi-mahi. A type of fish typically found in and around the waters of Malta during autumn. It is a white, meaty fish with a delicate flavour and is one of Malta's favourite foods.

In a small bowl or dish mix flour, salt and pepper together.
Heal olive oil in a pan.
Roll lampuki fillets in seasoned flour and fry on all sides on low heat until golden.
