Kwarezimal – Maltese Lenten Biscuits

A favourite traditional Biscuit enjoyed during the Lent Period. These Biscuits have a slightly crisp exterior and a soft chewy center. The ultimate Maltese Biscuit!

Ingredients
    Biscuits:
  • 400g/14.1oz Ground Almonds
  • 50g/1.76oz Margarine (melted)
  • 350g/12.3oz Sifted Self-Raising Flour
  • 350g/12.3oz Sugar
  • 2 Tbsp Cocoa Powder
  • 1 Tsp Cinnamon
  • 1 Tsp Mixed Spice
  • Juice and Zest of 2 Oranges
  • Zest of Tangerine
  • 1 Tbsp Orange Blossom Water
  • Topping:
  • Golden Syrup
  • Roasted Almonds (chopped)
Method
  1. Preheat oven to 180C/350F.
  2. In a large bowl, mix the melted margerine with flour, then add all the dry ingredients. Mix until well combined then add remaining ingredients.
  3. Shape the dough into small logs and place on a baking tray with baking paper, leaving space in between. Do not flatten they will spread out in the oven on their own.
  4. Bake in oven for about 20 minutes (they should be soft to touch when they come out of the oven).
  5. When cooled brush with golden syrup or honey and top with chopped roasted almonds.
  6. Enjoy!
