Mixed Berry Trifle with layers of Sponge, Custard, Strawberry, Yoghurt & Mixed Berry Sauce

This mixed berry trifle is a family favourite and is always a hit with my guests! Great for any occasion and serves a crowd.

Ingredients
  • 500g/17.6oz Ready-made Custard
  • 4 (150g/5.3oz) Tubs Strawberry Yoghurt
  • Cake Sponge
  • 500g/17.6oz Cream Cheese
  • 200g/7oz Mixed Frozen Berries
  • 50g/1.76oz Caster Sugar
  • Grated zest of ½ Lemon
  • Fresh Strawberries and Blueberries (cut in half or quartered)
Method
    Berry Sauce:
  1. Heat berries in small saucepan until they are soft crushing them with a fork.

  2. Add the caster sugar, lemon zest and 4 tablespoons water and cook until thick.

  3. Remove from heat and leave to cool completely.

  4. Strawberry Layer:
  5. Whisk the philadelphia cheese until soft and smooth.

  6. Add strawberry yogurt a little at a time mixing until smooth and well combined.

  7. Assemble:
  8. Trifle is made up with 3 layers in this order:

    1. Sponge in the bottom
    2. Top with a little custard
    3. Add some of the yogurt
    4. Drizzle around the edge of your trifle dish with the berry sauce and add a few drops in the center
  9. Repeat 2 times ending with berry sauce and fruit.

  10. Cover the trifle with clingfilm and refrigerate until ready to serve.

  11. Enjoy!
