This mixed berry trifle is a family favourite and is always a hit with my guests! Great for any occasion and serves a crowd.

Ingredients

Method

Berry Sauce:

  1. Heat berries in small saucepan until they are soft crushing them with a fork.

  2. Add the caster sugar, lemon zest and 4 tablespoons water and cook until thick.

  3. Remove from heat and leave to cool completely.

Strawberry Layer:

  1. Whisk the philadelphia cheese until soft and smooth.

  2. Add strawberry yogurt a little at a time mixing until smooth and well combined.

Assemble:

  1. Trifle is made up with 3 layers in this order:

    1. Sponge in the bottom
    2. Top with a little custard
    3. Add some of the yogurt
    4. Drizzle around the edge of your trifle dish with the berry sauce and add a few drops in the center
  2. Repeat 2 times ending with berry sauce and fruit.

  3. Cover the trifle with clingfilm and refrigerate until ready to serve.

  4. Enjoy!
