My favourite way to top a Pinsa with simple fresh ingredients for a quick meal or snack. Pinsa is a lighter alternative to pizza, lower in fat and calories. All pizza lovers MUST try!

Ingredients - Serves 2 Pinsa
  • 2 Pinsa Bases
  • 90g/3oz Parma Ham, cut in half
  • 2 Mozzarella di Bufala Balls, sliced (see note)
  • 100g/3.5oz Shredded Mozzarella
  • Rucola
  • Cherry Tomatoes, halved
  • Walnuts, roughly chopped
  • Extra-Virgin Olive Oil
  • Freshly Ground Pepper
Method
  1. Preheat oven to 230C/445F.
  2. Leave the pinsa on its packaging baking paper.
  3. Top with shredded mozzarella and a few slices of bufala and bake in oven until the mozzarella is melted and turning golden.
  4. When ready, top with rucola, parma ham, tomatoes and walnuts. Drizzle with olive oil and a sprinkle of freshly ground black pepper. No salt needed, the parma ham takes care of that!
  5. Enjoy!
Note

After slicing the mozzarella, place them on kitchen paper towels to absorb the water from both sides.
