Quick Oat Bread – No Flour, No Butter, No Yeast

This oat bread is so soft, packed with nutrients and taste, not only gluten-free but also incredibly easy to make!

Ingredients - Serves 8 Slices
  • 150g/5.3oz Oats (crushed to fine crumbs)
  • 300ml/300g Plain Yoghurt
  • 3 Tbsp Mixed Seeds (pumpkin, sunflower, sesame or of your choice - see note)
  • 1 Large Egg
  • 1 Tsp Baking Soda
  • 1 Tsp Apple Cider Vinegar
  • Pinch Salt
  • 20cm x 10cm/ 8 x 4-inch Loaf Tin
Method
  1. Preheat oven 180C/350F.

  2. Line the inside of the loaf tin with baking paper.

  3. In a large bowl, add the crushed oats, pinch salt and seeds. Mix together. Fold in the yoghurt, then add the egg.

  4. Now add the baking soda and apple cider vinegar. Stir together until well combined.

  5. Pour batter into prepared cake tin. Decorate the top with extra mixed seeds and bake in oven for 35 minutes.

  6. Leave to cool 15 minutes before slicing.

Note
  • Mixed seeds can be substituted with walnuts.
