Description

A tasty alternative to vegetables or potatoes when filling out a family meal!

Ingredients:
  • 200g/7oz Bacon (Chopped)
  • 1 Onion (Large)
  • 2 Cloves Garlic (Crushed)
  • Mushrooms (Sliced)
  • 1 Jar Grilled Bell Peppers (Roughly Chopped)
  • 1 ½ Cups Rice (Raw)
  • ½ Cup Pease (Frozen)
  • 2 Tsp Paprika
  • 1 Tsp Tumeric
  • 2 Tsp Curry Powder (Mild)
  • ¼ Tsp Chilli Flakes (Or Red chopped chillies (Optional))
  • Few dashes Soy Sauce
  • 2 ¾ Cups Water
  • 2 Tbsp Butter
Method
  1. Fry the bacon until crisp, remove and set aside.

  2. Add a little butter to the same pan and saute the mushrooms. Remove and set aside.

  3. To the same pan add more butter if needed and cook the onions and garlic. When they start to soften, add the mushrooms, peas, bacon, chopped bell peppers, paprika, turmeric, curry powder, chilli and a few dashes of soy sauce. Stir through then add the rice and water.

  4. Cover and simmer until rice is cooked through. Before serving fluff up the rice with a fork.

  5. Enjoy!

Note

Chicken can also be added to the recipe and served as a main meal.
