Ingredients
    Main:
  • 1 Cup Jasmine Rice
  • 200g/7oz Smoked Salmon
  • 1 Avocado, halved and sliced
  • Cucumber, sliced
  • 2 Hard Boiled Eggs
  • Sesame Seeds, toasted
  • Cherry Tomato Mix:
  • Cherry Tomatoes, halved
  • ½ Small Red Onion, finely diced
  • 1 Lime, juiced
  • 2 Tbsp Olive Oil
  • 2 Tbsp Chopped Fresh Parsley
  • Salt & Pepper
  • Dressing:
  • 3 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • 2 Tsp Honey
  • 1 Tbsp Rice Wine Vinegar
Method
    Rice -
  1. Wash and drain the rice. Add to a pan and cook according to package instructions. 

  2. Dressing -
  3. In a small bowl, whisk together the soy sauce, rice wine vinegar, sesame oil and honey. Set aside. 

  4. Cherry Tomato Mix -
  5. In a medium bowl, add the finely diced onion, lime juice and olive oil. Stir together, then add the cherry tomatoes, chopped parsley and season with salt and pepper. 

  6. Assemble -
  7. Divide the rice between 2 bowls and drizzle the dressing on top.
  8. Add the toppings on top of the rice; cucumber, salmon, avocado, tomatoes, sweetcorn and hard boiled eggs.
  9. Sprinkle with the toasted sesame seeds and a drizzle of dressing on top of salmon.
